  'Milanese' risotto

Ingredients:

- 350 gr. of rice; 100 gr. of 'mozzarella' (particular kind of Italian cheese made from cow-buffalo's milk), 10 gr. of butter; 5 little tomatoes; 50 gr. of grated 'Parmigiano Reggiano' Parmesan; minced basil; 3 spoons of olive oil, salt and pepper.

How to cook it:

Boil rice into salted water, strain it and add the mozzarella (cutted into little dices), the butter and the Parmesan. Put the mix in a butter-smeared baking-pan, cover with sliced tomatoes, dust with basil and some pepper, then pour the oil over it and put it in a very hot owen for a few minutes.
